BEST HOMEMADE PANCAKES

Pancakes are softer and easier to eat with fluffy inside and crispy edges.They are one of my favourite foods. It brightens your mood and you can’t go wrong with pancakes! You can enjoy it with your favourite fruits or Nutella or maple syrup..

If you are looking for fluffy and tasty pancakes, then this recipe is for you! I make pancakes whenever I want as it requires only few ingredients that are readily available at home.

This homemade batter is slightly thick and lumpy when compared to the boxed thin pancake batter. Thick batter is what we need to get fluffy pancakes. So don’t add extra milk to make it thin. If you are using salted butter, avoid adding salt. Mix the ingredients, till they are just combined and don’t over mix it. Rest the batter for atleast 15 minutes for baking powder to activate.

Using 2 1/2 teaspoons is a must to get fluffy pancakes. .Don’t decrease the amount. It doesn’t change the taste unless you are not using fresh baking powder
Testing it is super easy. Just stir about half a teaspoon of baking powder into a cup of hot water. It will immediately start to fizz and release carbon dioxide gas if it’s still fresh enough to use.

Let the pan gets heated evenly and then pour the batter in the centre with 1/4 cup to get same size pancakes. I tried using butter and oil to coat the pan but then the pancakes are not evenly browned so I suggest to avoid using anything on the non stick pan, then the pancakes are evenly browned and looks beautiful 😍

INGREDIENTS:

• All purpose flour – 1 1/2 cup
• Baking powder – 2 1/2 tsp
• Salt – 1/2 tsp
• Granulated sugar – 1/4 cup
• Egg – 1
• Whole milk – 1 1/4 cup
• Unsalted butter – 3 tbsp (melted)
• Vanilla Essence – 1 tsp

PROCEDURE:

1. Beat egg and milk together and keep aside.
2. In a bowl, sift flour, baking powder, salt and add granulated sugar.
3. Mix and make a well in the flour and add milk mixture, melted butter and vanilla essence.
4. Whisk till everything is just combined. DO NOT OVER MIX.Batter looks slightly lumpy and thick.
5. Allow the batter to rest atleast 15 minutes.
6. Heat the pan or griddle evenly on medium heat.
7. Pour the batter with 1/4 cup on to the pan and heat for about 2-3 minutes or till it’s golden brown.
8. When bubbles appear, flip the pancake and heat for 2-3 minutes.
9. Enjoy the hot pancakes with maple syrup and fruits.

TIPS:

• If you are using salted butter don’t add any extra salt.
• Do not over mix the batter.
• Rest the batter for atleast 15 minutes.
