These cupcakes are very easy to make..Just sift the dry ingredients and then add the wet ingredients to it and lastly boiling water to get thin batter. Don’t panic on seeing the batter. Just don’t overfill cupcake liners. Fill upto 2/3 level.
This recipe can be used to make 24 cupcakes.I made 18 cupcakes and few mini cupcakes for my girl. The mini cupcakes are sooo cute 😁 I used a basic vanilla buttercream frosting
INGREDIENTS:
• All purpose flour – 1 cup
• Unsweetened Cocoa powder – 1/2 cup
• Baking powder – 3/4 tsp
• Baking soda – 3/4 tsp
• Salt – 1/2 tsp
• Granulated sugar – 1 cup
• Medium eggs – 2
• Milk – 1/2 cup
• Vegetable Oil – 1/3 cup ( you can use any odourless oil)
• Vanilla Essence – 1 tsp
• Boiling water – 1/2 cup
PROCEDURE:
1. Pre heat the oven to 350F/175C and line the muffin cake tray with cupcake liners.
2. Ina large bowl, sift in flour, cocoa powder, baking powder, baking soda, salt and add sugar.
3. Add eggs, milk, oil, vanilla essence and mix till just combined.
4. Pour boiling water and mix till you get a thin batter.
5. Fill the liners till 2/3 full. DO BOT OVERFILL.
6. Bake for 20-25 minutes or till tooth pick pricked in the centre comes out clean.
7. Cool completely before decorating with frosting.
TIPS:
• Sifting the ingredients make lighter cupcakes
• Mix till ingredients are just combined.Don’t over mix the batter to avoid flat tops.
• The batter is thin and fill up to 2/3 level only.
• Decorate only after cupcakes are completely cool.
