SIMPLE & EASY FUDGY BROWNIES

This is my favourite brownie recipe. You will be surprised how easy these delicious brownies can be made! I got this recipe from a friend and I’m so thankful to her for introducing me to these cuties.

These brownies are so dense, softer and fudgy in the middle and shiny on the top. You don’t need any fancy equipment to make them.

Here I use a double boiler which is nothing but boiling on a sauce pan. Fill a small sauce pan with water up to an inch or two and set it on low flame. Use a bowl on it to mix the ingredients.See that water level doesn’t touch the bowl. These brownies can be made just from scratch!

INGREDIENTS:

• Unsalted butter – 10 tbsp
• Granulated sugar – 1 1/4 cup
• Unsweetened cocoa powder – 3/4 cup + 2 tbsp
• All purpose flour – 1/2 cup
• Medium eggs – 3
• Vanilla Essence – 1 tsp
• Salt – 1/4 tsp

PROCEDURE:

1. Preheat the oven to 325 F/ 160 C and line the baking pan with baking paper or aluminium foil.

2. Fill sauce pan with 2 inch level water and heat it on low flame.

3. Place a heat safe bowl and butter, sugar, cocoa powder and salt.

4. Stir the mixture until the butter and sugar is melted and a grainy mixture is formed.

5. Remove from the double boiler and keep it aside for 5 minutes till it is warm. Then add eggs one by one and mix after each one to get a smooth batter.

6. Then add the flour and mix vigorously for about 50 strokes to incorporate the flour into the mixture. Add vanilla essence.

7. Pour the batter in lines baking tray and spread evenly.

8. Bake on lower third rack for 25 to 30 minutes or till tooth pick inserted comes out with few crumbs.
9. Let it cool completely and cut into pieces.

TIPS:

1. The batter should be beaten vigorously for about 50 strokes so that butter emulsifies. If not, fat seeps out when baking in oven.
2. Brownies are done when edges look dry and in the middle, it’s slightly under baked as they continue to cook during cooling down process.
3. If the tooth pick comes out with wet batter, it should be cooked for sometime.
4. If tooth pick. has wet crumbs, it’s done.
5. If there is nothing on the tooth pick, then brownies may be over baked. So take them out immediately.
6. Some oven may take more or less time for baking so better start checking after 20 minutes.
