Quiche is a French tart consisting of pastry crust filled with savoury custard and pieces of cheese, meat, seafood or vegetables. I love quiches but the ready made pastry is not always available so tried with the flattened bread and they turned out delicious.. Literally can’t stop eating these cuties!!
My muffin tray holes are not deep enough so couldn’t get the exact cup shape. You can add whatever vegetables you like or bacon or chicken anything!

Yields : 6 cups
PROCEDURE:
1. Preheat the oven to 180 C/350 F.
2. Heat oil in a pan and sauté the vegetables for 2 minutes.
3. Cut the bread into round shape using any sharp circular object ( steel glass or cookie cutter or empty cans) and flatten them using rolling pin
4. Apply oil to the muffin tin holes and press the bread into them.
5. Place it in oven for 3-4 minutes till they are toasted a bit but not to be browned.
6. Whisk the egg, milk, salt and pepper.
7. Divide the vegetables and cheese into the toast cups and pour the egg mixture into each cup, place immediately in the oven.
8. Bake for 12-15 minutes or until the filling is set.
9. Remove from oven and set aside for 5 minutes before serving and serve warm.
Tips:
- Always use the fresh bread as stale bread will crumble while flattening.
- Don’t miss the cup toasting step and after pouring egg mixture, immediately place in oven to avoid it soaking into bread.
You can make bread omelette with the left over mixture and bread slices.
