Omelette pinwheels are delicious and easy egg snacks. If you are in search of a quick and healthy recipe, then this is the one! Kids will definitely love this.
One day, when I was going through easy and quick egg recipes, I came across this delicious recipe on WIKIHOW. I added a few more ingredients to make it more delicious!

I love coriander, so added a bit more of it.Hence my veggies mixture is a bit greenish red. If you want the mixture to be red, add less coriander.
INGREDIENTS:
• Eggs – 2
• Onion – 1
• Tomato – 1
• Chilli powder – 1/2 tsp
• Cumin powder – 1/2 tsp
• Coriander powder – 1/2 tsp
• Coriander leaves
• Curry leaves
• Lemon juice – 1 tsp
• Salt – as required
PROCEDURE:
1. Break the eggs into a bowl.

2. Add salt, chilli powder, cumin powder, coriander powder and mix well. Keep it aside.

3. Take onion, tomato, coriander leaves, curry leaves and roughly chop them.

4. Grind them and salt and lemon juice.

5. Pour the egg mixture on to a heated pan.

6. Flip the omelette and spread the vegetable mixture on it.

7. Cook for a minute and roll the omelette.
8. Cut the roll into pieces. Garnish with coriander and serve.
