Egg Malai curry is a creamy & tasty recipe that can be served with rice or rotis. This mildly spiced curry is made with boiled eggs and milk.
I like any dish with egg as they are easy to make and delicious too! I tasted this first in my aunt’s house and loved the flavour. My mom cooked many egg dishes but never with milk!This curry has a unique taste and flavourful.
INGREDIENTS:
• Eggs – 4 (boiled and deshelled)
• Onions – 2 (medium)
• Chillies – 2
• Mustard seeds – 1 tsp
• Ginger – 1 tsp (grated)
• Garlic – 1 tsp ( grated)
• Cumin powder – 1 tsp
• Coriander powder – 1 tsp
• Pepper – 1/2 tsp
• Salt – as required
• Milk – 200 ml
• Oil – 1 tbsp
• Coriander – a bunch
PROCEDURE:
1. Grind the roughly chopped onions and chillies to a smooth paste.
2. In a pan, add oil. When it’s hot, add mustard seeds. Let them crackle.
3. Add onion chilli paste and cook on low flame for 2 minutes.
4. Add ginger and garlic and cook on low flame for 10 minutes stirring occasionally till it becomes darker in colour.
5. Add milk to it stirring continuously and continue heating on low flame till oil separates.
6. Add the spice powders, salt and mix well and cook for 3-4 minutes.
7. Cut the boiled eggs into halves and put them in the curry with yolk side down. Cover & cook for few minutes.
8. Turn the yolk side up and add coriander. Cook till oil gets separated.
9. Serve hot with rice or rotis.
