THAI CHILLI CHICKEN

Thai food is always on our favourites’ list. The first time I tasted Thai food in Phuket, I feel in love with Thai cuisine!

Thai food have bold fresh flavours with a balance of sweet, spicy and savoury tastes.It became a part of our diet and we eat Thai food almost every week. Some finger -licking Thai dishes are very easy to make. One of which is this Thai chilli chicken.

You will definitely love this dish. It is made with crispy chicken and sticky Thai sauce. This Thai sauce goes well with everything.

INGREDIENTS:

Skinless boneless chicken – 300gm (cur into small pieces)
• Oil – for deep frying + 1 tbsp
• Garlic – 2 cloves (minced)
• Thai chilli sauce – 4 tbsp
• Lemon juice – 1 tsp
• white sesame seeds – 1/2 tsp
• Spring onions – 1 tsp
For batter:
• Egg white – 1
• All purpose flour – 1/3 cup
• Corn flour – 3 tbsp
• Salt – a pinch
• Cooking oil – 1 tbsp
• Ice cold water – 1/4 cup+ 1 tbsp

PROCEDURE:

1. In a bowl, mix all the ingredients for batter to get a smooth batter.
2. Add chicken pieces and coat well.
3. In a wok/pan, add oil upto 2 inches and heat it. When oil is hot, add coated chicken pieces slowly. Do not overcrowd the pan.
4. Fry till chicken is golden colour on both sides and transfer to a plate lined with paper towels.
5. Remove the oil from the wok and heat it with 1 tbsp oil. Add garlic and stir fry till it is aromatic.
6. Add Thai sauce, lemon juice and fried chicken pieces. Coat the pieces well with the sauce.
7. Transfer to a bowl and garnish with sesame seeds and spring onions and serve warm.
