This cake is a healthy option and it’s tasty, moist and fluffy cake that kids would definitely love!
My girl loves cake but I don’t want her to eat more refined flour cakes. When I was discussing about this with my sister, she said that she made a whole wheat jaggery cake and my niece loved it. So I thought of giving it a try and replaced all purpose flour with wheat flour and sugar with jaggery and the result is mouth watery 🤤
The cake is fluffy and tasty. It’s very easy to make with most of the ingredients always available at home. The preparation time is just 10 minutes and you can make it any time and a perfect companion for tea.
PROCEDURE:
1. Pre heat the oven to 180 C / 350 F
2. In a bowl, sift wheat flour, baking powder and baking soda.
3. Add jaggery and mix
4. To it, add milk, oil, curd vanilla essence and mix till all the ingredients are incorporated. (Do not over mix)
5. Pour the batter into greased and floured baking tray.
6. Tap the tray few times for the mixture to spread evenly.
7. Bake in the pre heated oven for about 40 min or till the tooth pick pricked in the centre comes out clean.
8. Allow the cake to cook for 8-10 minutes before removing from pan and enjoy the cake with a cup of tea!
TIPS:
- If you have a jaggery block, scrape it with knife and pulse it to powder in a blender.
- Any cooking oil can be used. I used sunflower oil.
- If you don’t have vanilla essence, you can skip it. I tried baking without vanilla essence and salt and still it’s delicious.
- Place a parchment paper in the baking tray and grease the sides with oil.
- Mostly there will be crack on the top, so don’t worry.
